  • 50 g of raw pasta (whichever you prefer)
  • 1/2 onion
  • 1 carrot
  • 1/2 zucchini
  • 1 sprig of broccoli
  • 8 green beans
  • 6 cherry tomatoes
  • Virgin olive oil
  • Oregano and basil


Clean the vegetables. Chop the onion in julienne, cut the carrot and zucchini into cubes, the beans into pieces and separate the broccoli into smaller clusters. In a pan with a drizzle of oil sauté the vegetables in this order because not all carry the same cooking time. First, the onion, before it begins to brown, add the carrot and the beans always stirring so that the vegetables are not burned. After 5 minutes add the zucchini and broccoli. Continue cooking for 5 more minutes or until they are ready and add a little salt. You can test if they are tender by pinching with a fork. Cook the pasta in salted water until it is “al dente” and drain. Mix the 2 preparations and when it has cooled add the cherry tomatoes cut in half. Almonds with oregano, basil and olive oil.

Grate the carrot and chop the onion. Peel the avocado and make a puree. Add the grated carrot, onion and lemon juice. Put on each pancake the leaves of whole lettuce or cut into pieces. Add the avocado mixture and the fresh cheese cut into cubes. Roll it up and take it to the beach.

Salad of chickpeas, cucumber and cherrys
